We. Love. Muffins. If you can’t tell by now… Paleo Pumpkin muffins, Chocolate Banana Chia Muffins, Apple cinnamon Muffins, to name a few, but I mean how can I not have a Paleo blueberry muffin recipe?!
I grew up eating blueberry muffins quiet regularly, which was probably weekly. That was the one thing about my mom, she cooked dinner every night. It was so rare and a real treat for us to eat out for dinner, which NEVER included fast food (Thanks Mom and Dad!). I still LOVE my mom’s home cooking and going home to a home cooked vegetarian meal is comfort for me!
Okay! Back to the Paleo Blueberry Muffins! We love these! They are grain-free, made with almond flour, gluten-free because we try to avoid toxic wheat here in the states (more on that coming!), and made with whole ingredients, because we need a little more wholesome food in our lives. They make us feel good!
Bring back the childhood memories and try these nutritious Paleo Blueberry Muffins!
Paleo Blueberry Muffins
(makes 12 muffins)
2 cups of organic blueberries (fresh or frozen)
2 1/2 Cups almond meal or blanched almond flour
2 Tbs Coconut flour
4 Pastured Eggs (Or vegan egg replacer, like NEAT Eggs, with a little added almond milk for moisture )
4 Tbs Coconut oil or ghee (melted)
1/2 tsp Baking soda
1/4 cup Raw honey (or 1/4 cup Xylitol low carb sweetener)
1 Tbs Fresh lemon juice
1 tsp Pure Organic Vanilla extract
pinch of Himalayan salt
