Homemade First Birthday Cake (Carrot Cake)… All Natural and Sugar-free!

 

first birthday cakeNothing makes me happier than seeing my twins flourish in their joy and in their health!  Making their first foods from scratch brought me so much happiness, from knowing what I put in their bodies!  They were thriving!  Just because they were turning ONE, didn’t mean I should start giving them junk either!  It was MORE of a reason for me to continue on to keep learning, cooking, and creating a more natural home environment for my family!  The older kids get, the more influence they have from outside sources!

This is why I am so happy to have made a homemade first birthday cake for each of my twins, and have continued on educating them on eating foods our God has made for us!  We continue to stay away from artificial ingredients (man made chemicals). My three year olds get it!  I continue to bring it back to the Lord and show what he has made for us to be our healthiest!

I’m skipping ahead a little of my homemade baby food series, but I have been meaning to share this recipe for a VERY long time.  For those of you who are new readers, I have made all of my son’s birthday cakes… and yes, they each get one!  Since I have twins, I wanted to make their birthday special for each of them individually!  We also sing “Happy Birthday” to each boy individually.  Rocco, who is one whole minute older than Maximus gets his time to shine first.

When their birthday came around, I was not ready for them to be loading up on sugar (natural or not!).  Honey is not supposed to be given to a baby before 12 months, and since my boys were five weeks premature, I didn’t want to risk them having any yet either!  Their adjusted age was almost 11 months!  At this point, they also had never tasted sugar, and I wasn’t ready for it!  They were still babies eating whole foods!

I also did not want them eating nuts just yet, so nut flours were out (I waited until 14 months).  With all of the nut allergies going around, I wanted to wait on those too!  I searched and searched, until I found something that I agreed with!

Homemade First Birthday Cake

Homemade First Birthday Cake (Carrot Cake)… All Natural and Sugar-free!

For your baby’s first birthday!
Ingredients
  • 2 1/2 cups organic shredded carrots
  • 2 1/2 cups organic apple juice concentrate (you may use slightly less)
  • 1 1/2 cups organic raisins
  • 2 cups gluten free oat flour
  • 1/2 cup melted coconut oil and extra for coating the pan
  • 6 whole omega 3 eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup organic unsweetened applesauce
  • 1/2 cup ground flax seed
  • 2 Tbsp aluminum free baking powder
  • 1 Tbsp ground cinnamon
Instructions
  1. Preheat oven to 325 F. Use coconut oil to grease two cake pans.
  2. Combine the carrots with 1 cup plus 2 tablespoons of the juice concentrate in a medium size saucepan.
  3. Bring to a boil, then lower the heat and simmer, covered, until carrots are tender, 15 to 20 mins. Puree in a blender of food processor until smooth.
  4. Add the raisins and process until finely chopped. Let mixture cool.
  5. Combine the flour, flax, baking powder, and cinnamon in a large mixing bowl. Add 1 1/4 cups juice concentrate, the oil, eggs, and vanilla; beat just until well mixed. Add in the carrot puree and applesauce. Pour the batter into the prepared cake pans.
  6. Bake until a knife inserted in the center comes out clean, 35 to 40 mins. Cool briefly in the pans, then turn out onto wire racks to cool completely. When completely cool, frost with Cream Cheese Frosting.

For your baby’s First Birthday!
Ingredients
  • ½ cup organic apple juice concentrate
  • 1 pound organic cream cheese
  • 2 tsp vanilla extract
  • ½ cup finely chopped raisins (in food processor)
  • 1 ½ tsp unflavored gelatin
Instructions
  1. Stir the gelatin into the 2 tablespoons juice concentrate in a small saucepan; let stand 1 minute to soften. Heat to boiling and stir to dissolve gelatin.
  2. Process the remaining juice concentrate, the cream cheese, vanilla, and raisins in a blender or food processor until smooth. Transfer to a mixing bowl.
  3. Stir the gelatin into the 2 tablespoons juice concentrate in a small saucepan; let stand 1 minute to soften. Heat to boiling and stir to dissolve gelatin.
  4. Beat the gelatin mixture into the cream cheese mixture until well blended. Refrigerate just until the frosting begins to set, about 30-60 minutes. Frost the cake.
  5. Top with fresh berries to decorate!

When I made this homemade first birthday cake, I didn’t have my blog, so I did not take pictures of the process.  But I do have some pictures to share of my babies eating it.  This cake may not sound appealing to older kids or adults, but for a baby who has never had sugar and only eating whole foods, this was heaven!
