Grain-Free Healthy Green Pancakes

Just today I was having a conversation with a friend about teaching our children the importance of real food, eating vegetables and whole foods and whether or not we should be hiding vegetables in food?  That is the question.

Why is it that so many of us have trouble getting our toddlers or kids to eat vegetables… or REAL FOOD for that matter?

Having traveled and lived abroad, really opened my eyes to different cultures and ways of eating.  It really made me appreciate meal times and whole foods, to where I wanted to instill that love for wholesome ingredients in my kids.  However, we do live in a different culture!  We live in a fast paced culture where we don’t have HOURS to spend cooking… or eating, like in Italy! Its not better or worse, just different!  And due to these cultural differences, our kids do not “eat like the French” as much as we try, because many of us are working moms and dads!  We need quick meals that pack dense nutrition for ourselves and our loved ones!

So, is it okay to [sometimes] hide vegetables in our food?  I say, absolutely!

The more vegetables we can get into their growing bodies, and ours(!), the better!  Yes, serve vegetables at dinner, lunch and snacks, get your kids accustomed to eating a variety of flavors, serve them vegetables even if they say they don’t like them!  It takes time to change a palate!

In the mean time, try these super delicious GREEN, no dye, pancakes your kids will love… and they won’t even know its spinach!  I know we’ve passed St. Patty’s Day, but these would also be really fun for your kids then too!  Green is not only beautiful, its delicious!

This recipe is a little variation from my Banana Pancakes!

Grain-Free Healthy Green Pancakes… For the Whole Family!

A fun way to eat more vegetables without even knowing it!
Ingredients
  • 2 bananas
  • 4 eggs
  • 2 Tbsp Coconut flour
  • 2 cups spinach
  • Coconut oil or grass-fed butter for the pan
Instructions
  1. Place all ingredients into the blender and blend until completely pureed!
  2. Melt coconut oil or butter onto griddle.
  3. Pour onto a heated pancake griddle.
  4. Serve with fresh berries and a drizzle of REAL grade B Maple syrup!

Simple, whole ingredients for these delicious pancakes. I keep my coconut flour in a mason jar to keep fresh.

 

Grain-Free Healthy Green Pancakes
Place all ingredient in the blender, I use the vitamix, blend and pour onto a greased griddle.

Spinach is so mild in taste, it is perfect to add to so many dishes!
