Summer lovin… Nothing says summer like fresh fruit dripping with goodness! I just love it! I grew up on a half-acre with a backyard full of fresh summer fruits and vegetables! My dad definitely has a green thumb and I’m sure that is where I get some of my passion for fresh wholesome organic cooking! Growing up in the summers I would just go in the backyard and pick a giant peach from the tree to put on top of my oatmeal. We had rows and rows of boysenberries and raspberries that my friends and I just loved spending time back there and “eating off the land!” Oh how I miss it!
My parents live an hour inland from here, where land is much more a plenty! Living at the beach, does have its perks, but what I would do for a large garden to grow my own food, and have a few chickens! Currently, I have a little garden that I tinker with and grow a few things such as kale, swiss chard, boysenberries (of course from my dad’s garden), grapes, herbs, and some other random seasonal veggies, but it is nothing compared to my parents!
Growing up, my Mom, would make fresh cobblers, from the homegrown organic fruit… boysenberry (she is famous for!), peach, apricot, you name it! And her pies… don’t get me started! So basically any fruit dessert, I cannot turn down! However, since I have really changed my diet, my health for the better, and try to stay away of processed ingredients, getting creative in the kitchen has been fun! I made this Paleo Peach Cobbler for Fourth of July and it was a hit! So I’m glad to share it with all of you… just in time for your summer BBQ’s!
Paleo Peach Cobbler
- 3 cups or about five large Organic Peaches
- 2 large organic eggs
- 4 Tbs Grass-fed Butter or Ghee
- 1/4 cup Coconut Flour
- 1/3 cup Coconut Cream
- 1/4 tsp baking powder (aluminum free!)
- 1/2 cup raw honey
- Boil a large pot of water and remove from stove.
- Place ripe peaches in water for a min or two to easily remove peel.
- Grease pie pan with coconut oil and slice peaches into pan.
- In a separate bowl, combine, eggs, flour, cream, baking powder and honey,
- Pour over peaches and place in oven.





It perfect to top with Homemade Coconut Whipped Cream or all natural ice cream of choice!
