What is it about Hawaii that is so enticing? Well let me rephrase that… what is it about Kauai that is so enticing? I have been to three of the Islands now, the Big Island, Kauai (twice), most recently, Maui, and by far, I just LOVE Kauai. Just like Italy, I left a little piece of my heart there.
Currently I live in Huntington Beach, California. It is a big city that is over populated and definitely a tourist destination. Although I do love living here (we have great restaurants, parks, outdoor activities, and of course the beach), there is something very special about untouched and quiet Kauai. Most people prefer Maui for more of the “nightlife,” but being that I live in the city I do, I just LOVE the peaceful, slow-paced, mellow, beachy Kauai vibe. These Hawaiian Chicken Kebabs, along with a little “Iz” or Jack Johnson, to take me back to my little piece of paradise.
Extra sweet grilled pineapple, red peppers and marinated Chicken breast, make these Hawaiian Chicken Kebabs something you will definitely want to make again and again. Serve with my delicious and crisp romaine salad for a perfect outdoor meal!
Take Me Back To Hawaii… Hawaiian Chicken Kebabs Recipe
Kebab Ingredients
- 1 lb or two large Free-Range Organic Chicken Breasts
- Avocado Oil (Or another high-heat oil) for the grill
- 1 large Red Bell Pepper
- 1/2 Fresh Pineapple
- Optional… all natural nitrate free ham slices
- 8 wooden skewers soaked in water for 30 minutes
- Six cups of Chopped Organic Romaine Lettuce (for salad)
- 1 cup thinly sliced radicchio (for salad)
Dressing and Marinate Ingredients
- 1/2 cup of milk of choice (coconut, almond, etc) soured with 1 tbs fresh lemon juice
- 2 Tbs all natural mayonnaise
- 1 Tbs Red Wine Vinegar
- 1 clove of garlic, minced
- 1/4 cup parmesan cheese
- Himalayan or Sea salt and pepper
- 1 lb or two large Free-Range Organic Chicken Breasts
- Avocado Oil (Or another high-heat oil) for the grill
- 1 large Red Bell Pepper
- 1/2 Fresh Pineapple
- Optional… all natural nitrate free ham slices
- 8 wooden skewers soaked in water for 30 minutes
- 6 cups romaine
- 1 cup sliced radicchio
- 1/2 cup of milk of choice (coconut, almond, etc)
- 1 tbs fresh lemon juice
- 1Tbs natural Mayonnaise
- 1 TbsRed Wine Vinegar
- 1 clove of garlic, minced
- 1/4 cup parmesan cheese
- Himalayan or Sea salt and pepper
- Slice chicken into 1 inch pieces.
- Mix together milk, 1 Mayonnaise, vinegar, garlic, salt and pepper.
- Add chicken and 1/4 cup of dressing to a bowl and mix.
- Let marinate for at least 30 minutes.
- Meanwhile, slice vegetables and pineapple into 1 inch pieces and soak skewers.
- Preheat grill to medium and brush brush grate with high heat cooking oil.
- If using ham, wrap ham around each chicken piece and add onto skewer, followed by bell pepper and pineapple
- Place all skewers on grill and cook slowly and keep rotating.
- Stir cheese into dressing and toss with salad.






This is a perfect meal for the summer! Serve with sparkling water, or some homemade Vitamin water (pictured), with fresh mint, lemon, and sliced cucumber! Your body with thank you!
