Green Smoothie Popsicles… For Your Picky Eaters!

Most of you already know my passion for green smoothies.  I love them!  Green smoothies are the perfect way to pack in dense nutrients, stave off cravings (more nutrients = less cravings!), control blood sugar and not to mention prevent disease!  Even better yet, my kids love them!  What a better way to get those greens (chard, kale, spinach, collard greens, beet greens) into their diets.

Now that my twins are older (two and a half)… and pickier… I’m having to get a bit more creative with their food!  One day they cannot get enough of something and the next day they want NOTHING to do with it!  It is a challenge that I’m sure every parent can relate to! And although we definitely try not to make a big deal about eating over here, we live by one main rule… You eat what your are given or you do not eat.  No “special’ or ‘kid friendly’ meals are made.  That doesn’t mean I deny them their favorite foods either!  It is all about balance… and yes, they have, sadly, chosen to go to bed hungry once or twice.

I’m so excited about my latest creation and it is our newest favorite treat!  My boys call them “ice cream” and I call them “piece of mind.”

Green Smoothie Popsicles

 Ingredients (always try to choose organic)(Feel free to build your own custom green smoothie popsicles)

  • 1.5 cups greens of choice (Kale, spinach, etc)
  •  2 carrots
  • 1 banana
  • 1 orange
  • 2-4 Medjool dates or 1/4 cup raw honey
  • 1 cup milk of choice (coconut milk, almond milk, rice milk, etc)
  • a boost (flax seeds, hemp seeds, chia seeds, etc)
  • popsicle molds (these are our favorite… BPA free and have a built in drip tray!)

Add them to the blender.

Pour into your popsicle molds and freeze.  They should be ready in a few hours.
