10 years ago, I was all about diet. Low-fat, no- fat, sugar-free, diet food, chicken breast, 99% fat-free turkey… yuck! Thank God, I finally broke free from that destructive pattern. Diet food tastes terrible and you cannot live on it forever, hence the term “diet.”
God did not make Chicken for us to eat only the breast, because it has the lowest amount of fat, we would be wasting the rest of the other meat! Same with beef, Top Sirloin is a pretty lean cut, but what about the rib-eye? Fat does not make us fat, processed foods, artificial ingredients and over eating makes us fat… and unhealthy! I was a yo-yo with my weight, some of it having to do with my PCOS, and MUCH of it having to do with my food choices. Gain 10, lose 10, etc. I truly hurt my body for a long time.
Now, I cannot get enough fat! Bring on the coconut oil, the nuts, olive oil, whole eggs, whole milk, avocado’s, avocado oil, Chicken thighs and legs, steak, cheeses… I love it all! Fat is needed for your skin to remain supple, it our number one source of energy and yes, even saturated fat is good!
As for this recipe, seriously, my husband and kiddo’s could not get enough of these. And I quote, “these are the best thigh’s ever,” according my husband! Chicken thighs are perfect for grilling and baking. They are juicy, tender, and have so much flavor!
Clean Eating Chicken Thighs – Honey Mustard and Rosemary
Ingredients
- 1 pack of about six large Organic Chicken Thighs
- 1/2 cup Dijon Mustard
- 1/4 cup Honey
- 1 Tbs Rice Wine Vinegar
- 1 sprig of fresh Rosemary
- 1 tsp Sea or Himalayan Salt
- Pepper to taste

I make a similar chicken thigh recipe except I add 1/2 a cup of goat milk kefir and a little cayenne for some heat. Good stuff!
