Muffins. They seem like they would be such a healthy choice for breakfast. Unfortunately, most muffins should be considered a dessert with how much sugar they contain!
A very long time ago, I was a waitress at Mimi’s Cafe. They had the best tasting muffins ever! The bran muffin was “dressed” to look so healthy, but little did everyone know that it was one of the highest calorie muffin there! It was loaded with sugar… processed sugar! Or the Low-fat blueberry muffin, also disguised by its name to seem like a healthy choice, but was made of white flour and also loaded with sugar to make up for the lack of fat. Yuck!
Fortunately, we have options. We can choose what we eat, what we make, what ingredients we want to put in our food. That is why I love the saying, “health starts in the kitchen!” It is so true! We have all the power as we cook and create. We have the choice of what we decide to bring home and keep in our pantry. Eating clean, eating healthy, eating for wellness, is so powerful!
Almond flour is one of my favorite flours for baked goods. Do to my blood sugar issues, I have to be careful on my carbohydrate intake, and an added bonus it is full of nutrients!
Why I use Almond Flour?
- It is gluten-free (won’t make me bloated)
- Almonds are nutrient dense
- It is full of protein and healthy fats
- It is low in carbohydrates
- It will not give me a blood sugar spike (keeps me full longer!)
- It is great for baking
Everyone can benefit!
Are you interested in making your own? Throw 2 cups of Raw almonds into your food processor for about three min until really fine and grainy. Store for a week in an air tight container in your pantry or months in your freezer.
Homemade Grain-Free Apple Cinnamon Breakfast Muffins
Ingredients (makes 12 muffins)
- 2 1/2 cups chopped Organic green apples (or apples of choice)
- 2 1/2 cups almond meal
- 2 Tbs coconut flour
- 4 eggs
- 4 Tbs coconut oil
- 1/2 tsp baking soda
- 2 Tbs Cinnamon
- 1/4 cup Raw honey
- 1/2 cup unsweetened apple sauce
- pinch of Himalayan salt
- Sliver almonds or Chia seeds optional (sprinkled on top)

Not sure! I don’t count calories fat or carbs and found when I just eat real food, I don’t need to 🙂 I know there are calorie calculators you can enter the recipe and figure it out, if needed 🙂
