I am definitely not a cake decorator. My icing is far from perfectly smooth. What I care about most are the ingredients that are in my cake and, of course, how good it tastes. Cake doesn’t have to be unhealthy to taste good either! It can be loaded with natural ingredients and full of nutrition and still taste amazing! There is such a thing as healthy birthday cake… that your friends and family will love as much as you!
For my twins, Rocco and Maximus’s second birthday, I wanted to make something a little more fun and try something new. This cake is sweetened with raw honey, which is full of enzymes, antioxidants, minerals, vitamins and amino acids, it is colored with freeze dried fruit, grain-free, and made with love (isn’t that always the secret ingredient?).
Happy Healthy Birthday Cake

This looks fantastic!!! I don’t think I’ll have all the ingredients for the cake itself (arrowroot and coconut flour) ready for Ben and Mia’s birthday on Friday, but I am making them a cake and will definitely use a modified version of this and will for sure use the frosting and filling part of the recipe 🙂 I can’t believe our babies are two this week!!
Funny story- Mia walked by and saw the pictures of your boys eating the cake and started yelling “Boys eating cake!!! Mia wants some!!” Then Ben walked by to look and I told them that it was Maximus and Rocco’s birthday, so they sang Happy Birthday to them :). I asked them if I should make them that cake for their birthday and Mia said “Yes! Mommy make purple cake right now!” 🙂

Oh my gosh Tanya that is adorable!!! They are so cute!! Happy birthday to Ben and Mia too! I cannot believe our twins are TWO!!! I bet they would love a playdate! 😉
Let me know how the cake turns out! In replace of arrowroot, you can use cornstarch. The coconut flour gives it the fluffiness. Let me know how it turned out !!

Well, due to lack of time (these two have decided that they are too old for naps recently!!!!) and also lack of a few ingredients, I ended up modifying this quite a bit, but I did make your icing and of course that was their favorite part ;). I forgot to pick up the freeze dried fruit so I ended up making a blueberry and raspberry syrup from fresh fruit and using that for coloring 🙂 Oh, I also made your creamsicles and they are SO good!

I hope they had a great birthday!!! I am glad you like the popsicles too 🙂

I laughed when I read your first sentence–I am so not a cake (or cookie) decorator. Your cake isn’t fancy but still looks very pretty with its ring of berries.
