Sliced tomatoes drizzled with olive oil and balsamic, rich marinara sauce, Sun dried Tomatoes on top of pizza, in your pasta or on top of salads! I love tomatoes. They are such a great addition to so many meals and they are incredibly versatile. Sun dried tomatoes have so much flavor and are also full of nutrition! They maintain the same nutritional value as their fresh counterparts- Lycopene, antioxidants and vitamin C! Adding them to just about any dish will add amazing flavor!
I was originally VERY disappointed that my tomato plants were tagged incorrectly (I bought Roma’s). But, thanks to your great suggestions on my Facebook page, I made sun dried tomatoes from my homegrown Sun Gold Cherry Tomatoes… in the oven (I do not have a dehydrator just yet)! Making Sun Dried Tomatoes was so much fun and they didn’t take days to make, just a few hours!
Homemade Sun Dried Tomatoes… In the Oven!
Ingredients
- 1-2 lbs of Cherry Tomatoes or Roma Tomatoes
- 1/4 cup Extra Virgin Olive Oil (more for storing)





Store in a Ziplock bag in the freezer or in a glass jar and cover with olive oil and store in the refrigerator.
They are a brilliant solution to spice up any recipe with amazing flavor… and nutrition! Enjoy!
